Ok my mom is mad at herself. She can't find grandma's apple cake. So she is going to give you what she remembers. She said she remembers everything you need but can't remember how much. So here what she has. Oh my brother's girlfriend has worked with it and said it was good. She is a person that likes to make everything perfect. She said she has done it twice and played with it both times. My brother couldn't tell which was right and my mom said they both looked like it. My brother did say they both were good. She used what my mom gave her and she just played with it. I asked what she did and she said what my mom told her she just played with the amounts. So here it is. My brother's girlfriend name is Deb. She said I can tell you so I don't have to type so much.
Deb said to use apples that are red and are good baking apples. She had used green ones and didn't like it. She took it to work and told them her sister made it and it didn't go well. But the red ones did.
You are going to make it in a cake pan, my grandma used a cookie sheet but mom said it always boiled over when she made it so she used a cake pan. Deb just called and she said she made one for her mom using a pie pan and her mom said it was good
You want to peel and de-core them. You are going to slice them. Mom said to cut in 1/4 then 1/2 them. So it depends what kind of pan you are going to use to how many apples you need.
My mom said that grandma used a product called Bisquit{?} to make the base. Deb said she used pie mix and made it so there was twice as thick as you would use in a pie.
Put the apples in single layer on top of the base. Have the inner{where the core was} just under the apple in front of it. Cover the complete base.
Deb said to mix sugar and cinnamon together. Make it more sugar then cinnamon. She said that this you have to play with. It is what goes on top of the apples. She just sprinkled it over the apples with her hands. She said you want all the apples covered with it.
Bake at 350F till crust and apples are soft. She just kept checking it with a tooth pick in different areas.
Cool and serve.
Deb said she wishes she knew how much sugar and cinnamon she used but she bad a gallon storage bag of it so she will have it. Deb said she has changed it a little from what my mom said cause her first try she had to throw away. She said it kinds of reminds her of apple crisp but it is make like a pie and the topping isn't crisp. She said the best way to describe it is an open face apple pie with sugar cinnamon on top. Deb said it is good with ice cream. She said to play with it and don't pile the apples which she did once. Yes she said she played with it and said that just have what is in it is the biggest part. My mom said she was so sorry she couldn't remember where it was. Deb was happy to get what was in it. My brother said it was good is all Deb cares about. Her mom liked it too. Oh I hate typing and talking on the phone at the same time. Deb said that if you uses pie pan she cheated and got the premade pie mix and pressed both in the bottom of the pan then laid the apples just like the cake pan but in a circle so the whole base was covered. She called it apple pie cake. She is going to try it the pie way and put a light layer of the sugar cinnamon in the middle of the layers and then on top to see how it came out. Her mom likes it in the pie pan better then the cake pan. Yes she said she leaves the whole pie pan covered.
If you play with it and it comes out good Deb says she wants your version on it. I can't bake so me no try.

100g butter
1dl of sugar
2 eggs
2dl of sour cream (we use Finnish curd cream)
2 and a half dl wheat flour
1 teaspoon baking powder
- All the ingredients are mixed together

My mom said grandma used biscuit mix for base a lot too. She said grandma made it different ways so she thinks that is why she can't remember how to make the base. She said not to use cake mix as it is too thick. She told Deb to play with it. Deb made it she made a thick pie crust from scratch and said it was good. She said she is going to use a biscuit mix the next time to see how it is. Deb did say to keep and eye on it and only bake it till the base is done and the apples are soft. She checked it with a toothpick. Let me know how yours comes out so I can pass it on to Deb.

Went to a restaurant with my mom. It was a buffet. She came back to the table with something I never thought it would be good. Which she said my grandmother uses to eat all the time. It was lettuce, cottage cheese, and peaches. She said she put the lettuce on the plate then the cottage cheese on top of the lettuce and the peaches over all that. She said she drained the juice off the peaches before putting it on top. When she got back to the table she mixed it all together. She said grandma uses to slice her peaches and it was better then the kind from the can. Mom calls it summer salad. She likes it when she doesn't want a real salad. I have had peaches and cottage cheese together but no with lettuce. My mom said this is easy when you don't want to heat up the house. She said grandma even uses to mix tuna or salmon in it too but don't put too much fish just a little. Of course we were at a restaurant so she couldn't do the meat. Though this would be fun to send it your way. I had already ate when she brought it to the table so I haven't tried. My mom said grandma said they ate simple during the depression. It sounds real good. I have had tuna with lettuce and cottage cheese and peaches before but not all them together.

After the war, people ate cheat bread (bark Bread) and drank coffee substitute made from rye, barley, manure and dandelion root, but also contained about 25 percent genuine coffee. In 1942 a coffee substitute was also introduced, which did not contain any genuine coffee at all. The counterpart contained 85% cereals with the remainder being beet and chicory. Food was literally on the card because every household got different cards on the food because it had to regulate for example, milk, butter and sugar only got a certain amount at a time. And if the house had children thet got a little more than those without children. I've seen those cards and have been labeled by my grandparents when I was young.

My mom said that they ate like there was a depression as she grew up. She said the they saved money because they didn't know what was going to happen next. Grandma made their own bread cause it was cheaper and made meals that would last more then one day. My mom cooked the same way. She said that was cause she was taught to cook like that. So yes mac and cheese, goulash, chili, stews, soups, and spaghetti all lasted and was good the next day. At Thanksgiving and Christmas my mom would cook a big turkey and then make turkey soup. It was soo good. There was 6 in our family so big meal were a must do. We had the stuff I listed a lot. And I still like them all. Our treats were pop pies, tv dinners and chicken chow mein. Yes tv dinners and pot pies were a treat. We were even able to pick them out at the store. Our cereal was never the name brands. My mom was a stay at home and my dad worked at the State Prison. I grew up in the 60s and 7os and was happy for what we had. So were my brothers. We fought over the tv and who got the best seat in the car. The rest was what we got is what we got and we were happy. We are in a bad heat wave but when it is over I'm going to get the cottage cheese and peaches. I may try the lettuce with it. I'm not fond of uncooked fish so tuna salad is not on my yummy list. Sorry cats. Hey I just thought of something my mom made that was good. It is called tuna casserole.
She used 1 large can of tuna, egg noodles, and green peas{fresh or frozen}, and cream of mushroom soup{condenced}. She cooked the noodles then drained them. In a casserole bowl she mixed the noodles, drained tuna, soup{have her on the phone and she said you can use cream of broccoli soup too and don't add water to it} and peas. She said you can use any seasons you want. She said she would put the onion she thinks they are crispy fried onions. She said some people put them on top of green bean casserole. She said she did that when she had them left over from the green bean one and if my brother didn't eat them. She would bake it at 350F for about 30 minutes. She said the tuna had to be hot and the peas done. She said she hasn't made it in a while so she isn't sure on the amount of time.
Sorry this is so long. My mom called while I was typing and I told her what I was doing so she wanted the tuna casserole put in. Boy has this feed gone on I love it. Bad thing is I am now hungry LOL.

Today I do not need to cook because at the weekend there is still vegetable soup to this day.
Sometimes I've done pretty simple food which is needed only canned tuna, onions and tomatoes. Sere it with spaghetti or rice and veggies.

I got an pressure cooker that can be used as a slow cooker or instant pot. So I can cook when it is too hot to cook. I haven't used it yet. So no report how it did. My mom is going to give me her potato salad recipe. It is good but might be the same as others. I did tell Mama Fuzzy Bums we were doing a human food thing. I really like this one. I don't know if she will come in and check it out but will keep reminding her. Maybe even ask her if she has any recipes to give. She hasn't done pj party the past couple weeks so talked with her on messenger. Timmy said something about he has a new uncle but no details. You know it is hard to get that from a cat. So will keep after my mom for her potato salad. She did say to tell you that she has had sliced tomatoes with the tuna salad. She can't eat non cooked tomatoes anymore cause the acid in them bother her mouth.

Have you used a new pressure cooker? I've been thinking of buying one at some point. Or ask if I could get one for Christmas.
I've been a little lazy cooking because there have been so hot that it is not done the mind begins to make the food in front of the hot oven so we ordered food at home. Today we have chicken soup for food and tomorrow a meat stew.

It has different options and one is slow cooker. You have to do a pretest before using it which I did. The pressure cooking part makes me a little nervous so I did do a beef roast with veggies and it was super good. My next test will be doing the pressure cooker mode. The one I got is really easy to work with. This was my first big thing I have cooked. It comes with a recipe book and what I call cheat sheets. Telling you how long and what settings to cook on. You can make yogurt in it but sounds kind of weird so don't know if I will try that. The meat was super good and not tough. I put just basic stuff in it. Beef chuck roast, red potatoes, snap green beans{fresh from a farm}, beef broth, onion soup mix, pepper and sea salt. I cooked the meat for 5 hours then added the veggies. It was done after 6 hours but I was busy killing sky raisins, that is another story, so pot went to keep warm and it was ready when I got to it. It was enough for me 4 meals. Don't know what my next adventure will be. Can't remember if I told you I got it from Amazon and it is the Mueller 10-in-1 Pro Series Pressure Cooker. Oh mama had pj party last night and I brought up this feed but don't know if anyone saw it because mama's battery died so didn't last too long.

Sounds like good, tasty food. I have never put fresh peas in food only in can of peas or corn. The last time I made a meat stew I put meat, potatoes, sweet potatoes, carrots, canned mushrooms, red onions, onions, meat broth and pepper in it.
At the weekend I thought to cook pork neck roast with meat broth in the oven pot, at the last hour I add the peeled potatoes, onions,carrots and put the pot back in the oven.
A pressure cooker always makes me a little cautious because I'm afraid it will explode. When I was younger my mother made pea soup in a pressure cooker and the boiler never exploded but the sound of the pressure somehow scared me. I'm still going to buy a slow cooker because I've heard nothing but good about it.

Meowmy the pressure cooker part of it makes me nervous. I'm still not brave to uses it. This pressure cooker has a slow cooker/crock pot on it. I like using it. Everything cleans up nicely too. A pepper sounds good. I am going to the farmer's market tomorrow after work to see if I can find snap beans to put in the roast I got yesterday. A green pepper sounds really good. Maybe instead of beans I'll get carrots and green peppers to put in it. I got a roast I can keep in the refrige till Saturday so don't have to wait for it to thaw out. I got baby red potatoes to put in it already. I couldn't believe how good it was so wanted to cook again. My mom said I was silly. I want to get my money worth. I get these fancy things and get away from it. I can do steam veggies with this pot. My friend has one and she does it with the slow cooker setting. She doesn't like the pressure cooker part for the same reason we don't.
My mom uses to make another yummy cake, at least I think it is a cake. I know it has pudding and graham crackers in it. So going to try and get it from her.
